Quick and Easy Meal Idea

Last week, before the holidays and my subsequent gorging on Turkey and Ham, I made a pretty quick and easy meal that I wanted to share. I did not remember to take a photo but I did freeze the left overs so maybe when I unfreeze it later on I will remember and post a photo. I did not go off of a particular recipe for this meal idea. I actually got the idea from a dish I had at an Italian restaurant last year that Mike and I went too and I thought it would be easy enough to recreate at home which it was. This is my version of Cheesy Shrimp Risotto.

1 box of Risotto (Parmesan flavored works nicely)
1 package of medium sized shrimp (I purchased the cooked, pre-peeled and pre-veined version)
1/2 bag of frozen peas and carrots

Prepare the Risotto following the box directions. Boil the Shrimp until cooked and tender. Heat peas and carrots until cooked. Once everything is cooked (takes about 10 minutes total for all 3) combine into a bowl and stir until everything is well mixed. Spoon onto plates and serve. I haven’t perfected this recipe but next time I plan on adding more cheese to give it a more cheesy taste.

Got a wish you want to tell Santa about?

Do you have a wish you would like to tell Santa about but don’t know the quickest or easiest way to do it?  Maybe you are over the acceptable age of believing in Santa but still want to talk with him or share your wish list.  CEIVA has an interactive video on their website where you can talk directly to Santa (and confidentially if you want) and tell him what YOU want for Christmas.  The video is very cute and allows you to upload a photo of yourself for when Santa is reviewing your wish list and deciding if you have been naughty or nice.  Luckily I have been nice this year so I am looking forward to the books I told Santa about and seeing if they are under the tree Christmas morning.

Really anyone can use this video/website. I am going to pull it up next weekend when I go visit Christopher, my godson, so that he can “see” Santa and get use to what Santa looks like. This is his first real Christmas so he has never seen the big guy in red. I think it will be really fun to see Christopher’s face when Santa and the elves start talking to him in this video.

How cool is that? They also offer a 12 month payment plan on their photo frames not that they are any more expensive than others out there ($129).

Aloha Friday - Week 3

It is that time again!  Aloha Friday.  I just love these short questions each week and hearing what other people are doing and thinking.  This week since it is Black Friday, the question on Island Life is “Are you going shopping today?”.

I will probably go out later tonight.  We have our extended family Thanksgiving meal at 1pm and I was not in the mood to go out this morning so my brother or mother and I will probably venture out after our lunch and see what we can find.  I really don’t have anything in particular but I do need to go to Barnes and Nobles since I stayed up till 3:30 last night reading and finished my book.

My question this week is if you went shopping, What was the best deal that you found.  It could be shopping online or at the brick and mortar stores and gifts for yourself count ;)

Have you struck out or struck gold with Black Friday 2008?

How have you been doing with Black Friday 2008? Did you run out to the stores? Have you finished your Holiday shopping? Are you waiting for Black Friday sales to be over so you can safely leave home and maybe run to the store for something? Me? I’ve done ok so far this year. I did not get out before the sun rose to go to brick and mortar stores. Instead, I hopped online last night around 10:30pm and started seeing what was on sale at various stores. I’ll give a short run down of what I’ve bought and from where:

  1. Canon Powershot 8MP at Newegg.com for $109, camera case for $6, and 4 2GB SD Memory Cards for $22
  2. $40 in gift certificates to a Houston Restaurant we go to for $12 thanks to Restaurant.com
  3. Digital Photo Frame on Buy.com for $45
  4. 4 Tapout Tshirts for $130 (not a sale but shipping was free which save me $21)
  5. 4 Books from Amazon.com for $30 ($16 was shipping fees)

Not too terrible but not the great deals I was hoping to find.  I still have some shopping to do at Sephora and need to call some of my friends to see what is on their DVD lists to see if I can pick up anything on sale at Target or Best Buy today.

Wow! It seems like everyone is running a black friday deal this year. While there weren’t any large ticket items to drag me out of bed before the sun rose, I have found quite a few great deals online and have been slowly crossing gifts off the list I made last week. I do have to admit that I have done a little shopping for myself. I just bought some used books and I bought some cheap gift cards late last night that were a steal. Sometimes you just can’t pass up great deals for yourself during this season.
