Sometimes I wonder why I bother to update anyone on my diet/weight loss failure for the week. Other times I know exactly why I need to do it. I need to see in black and white that I am not doing what I am suppose to be doing and it is totally up to me to change. Burying my head in the sand wishing and praying that I all of the sudden lose weight is not going to happen ever.
So another week came and went. I did ok during the week. Only ate out once for lunch and then made healthy tuna helper. I even stopped by the grocery store and picked up healthy foods (mainly produce) and then grabbed a bunch of different meats that were on sale so that I don’t have an excuse not to eat in and be healthy. I’m hoping this plan will work. As of right now any time you open the freezer you quickly step back in case something falls out and lands on your toe (ouch!). Only time will tell. The weekend was the down fall yet again. Went out Thursday night to celebrate with Mike, went out Saturday night for a birthday, and then went out Sunday with my mom. Didn’t pick a single healthy item at any of those places but boy were they good.
So goals for this week:
- reread this post and remember that I must quick relying on wishful thinking. Changes start with me
- learn to enjoy going to the gym and go even though Mike is out of town
- start meal planning again.
- dust off the crockpot and try a new recipe
We’ll see how this week goes. Small changes now so that I see bigger changes down the road.

With all of the celebrating Mike and I have been doing lately I have fallen off of my weight watchers bandwagon. It seems like there is always a reason to go out either together alone (recent engagement, Mike’s promotion, setting our date, etc) or with our friends (30th birthdays, people coming into town) and normally chips, queso, chicken wings, and beer are heavily involved. Needless to say I’m having quite the problem losing weight!!! I have been battling the same 5 pounds for 2 weeks straight. They aren’t real pounds, rather water/salt retention that goes away after 2 days of non-stop water but nevertheless I’m battling them and not the 20 I really need to lose!
So today I have been looking for free websites to help me stay on track and get in shape. So far I have old faithful -> Dottie’s Weight Loss Zone Message Boards and my magazines. I found a few sites that are promising and I just need to bookmark them and make myself check them regularly -> Fitday and Calorie King. I also plan on actually making the recipes HungryGirl sends me each day instead of saying “Oh those look good” and then filing the email into my HungryGirl email folder. Each of these sites are free so if you are looking for some motivation or ideas give them a try.

The week before the Memorial Day holiday I was suppose to be spending time traveling all over England, Scotland, and Ireland. As luck would have it my trip was canceled and I got to enjoy my week off from work hanging out at home while Mike studied for the Regulation section of the CPA exam. I had my family pop over for a few days and wasn’t quite sure what to feed them but I knew I had some basic ingredients in my fridge/freezer: beef, biscuits, and the cajun trinity so I popped open a cookbook and found Ground Beef & Biscuits and decided to give it a go. It turned out to be really good and if it wasn’t for the peas even my picky brother would have loved it (he just “liked” it). So if you are in a rut or short on time try this recipe out!
Ground Beef and Biscuits
1.5 pounds extra-lean ground beef
1/2 cup celery, chopped
1/2 cup onions, chopped
2 Tbsp flour
1 tsp salt
1/4 tsp black pepper
1/2 tsp. dried oregano
2 8oz cans tomato sauce
10oz pkg frozen peas, thawed
2 7.5oz cans refrigerated buttermilk biscuits
2 cups fat-free shredded cheddar cheese
- Brown ground beef, celery, and onions in nonstick skillet
- Stir in flour, salt, pepper, and oregano
- Add tomato sauce and peas
- Pour into slow cooker
- Arrange biscuits over top and sprinkle with cheese
- Cook uncovered on high for 1-1.5 hours
Nutritional info: 370 calories, 9gms fat, 35mg cholesterol, 38gms carbohydrates (3gms fiber, 5gms sugar), 34 gms protein
My observations: If you have read my other recipes that I have posted you know that I always have to add a little something or take a little something away from the original recipe. This one was no different. Instead of worrying about buying frozen celery and onions, I just defrosted some of my cajun trinity (onions, celery, bell pepper) and used that. It was just fine. Another item, I only had 2 12oz canisters of biscuits and that proved to be too much. If you are in that situation just use one can! Lastly, my sew chef did not tell me to cook uncovered so I put the lid on it. The recipe turned out fine and the biscuits came out unharmed. So if you forget don’t worry!

Sometimes you just have to rant and let it all out. Today is one of those days. Mike and I just got back from an hour and a half at our gym and once again we had some characters come out tonight. I try not to judge people too hard while I’m there because let’s face it I’m not in great shape which is why I’m going. But one thing that kills me is people dressed poorly and people who pay trainers to “train” them when the trainers are not in shape themselves.
Tonight was no different. I really wanted to take this one lady to Academy and help her find a sports bra that fit and properly supported her. Normally I don’t pay attention to what people wear as long as they are covered I’m ok. But there seems to always be one person who just wears a sports bra. Ok fine except when the sports bra is too big and just not doing it’s job supporting you. So people who are reading please check workout clothes/support garmets for proper fit. I don’t care how loose or tight it is but make sure the piece of clothing is doing its job.
Secondly, when you are picking out a trainer make sure you are picking out someone who takes care of themselves as well. I just can’t tell you the number of people I see in my gym who pay these glorified counters to train them and after months there is no improvement. Yes I know first hand you can’t change your body overnight but before dropping $60 an hour watch the trainers work out other people and take a look at them. If they aren’t in shape why do you think they will help you get into shape??
Ok rant over and I now feel better letting that out as well as eating some dinner. I waited way too long to work out and then way too long to eat dinner!
