What’s for Dinner? Cheeseburgers and Fries Casserole!

I was going through my freezer this past weekend trying to determine what I could cook and what I felt like cooking when I ran across my Cheeseburger and Fries Casserole recipe.  Its one of my favorite recipes because it includes my favorite ingredient - french fries and is only 6 points per serving.  Can’t beat a recipe that includes french fries and is weight watcher friendly.  Its a great base recipe that is easily changed each time you make it so that it does not get old or stale.  I don’t believe I’ve made it the same way twice.

I hope you enjoy it as much as Mike and I do.  I have received feedback that it is popular with kiddos and can easily mask those icky veggies like onions, celery, and peppers that kiddos try to avoid eating ;)
Cheeseburger ‘N Fries Casserole Very Good
6 servings 6pts

1 pound extra lean ground beef 4% fat
10 3/4 oz 98% Fat Free Cream of Mushroom (or chicken/broccoli/celery) Soup
10 3/4 oz Campbell’s Cheddar Cheese Soup
20 oz Ore-Ida Golden Crinkles
Optional ingredients may include: minced garlic (to your liking), 2/3 cup to 1 cup of chopped/minced veggies (such as onions, bell peppers, celery - The Cajun “holy trinity”), 1 can mild rotel, salt & pepper, ketchup
Instructions
1. In a skillet, brown ground beef then stir in soups.
2. Pour in a 13×9 pan sprayed with no stick spray.
3. Arrange fries on top.
4. Bake, uncovered, at 350* for 50-55 minutes or until the fries are golden brown.

This week I substituted tater tots for the french fries per request.  They tended to work well with the casserole as they tended to mush up with the cheesy mixture.  If you are a crisp fry lover you may not want to go the tater tot route.
